Ingredients

8 oz (≈225 g) pasta (penne or any short pasta) Salt & Lavender+1
1 lb (≈450 g) shrimp, peeled & deveined Golden Grace Kitchen+1
2 Tbsp butter Salt & Lavender+1
3-4 cloves garlic, minced Salt & Lavender+1
1 small onion or shallot, finely chopped Salt & Lavender+1
1 Tbsp tomato paste Salt & Lavender+1
Sun-dried tomatoes, chopped (≈⅓ cup) Salt & Lavender+1
Dry white wine (or substitute with broth) Salt & Lavender+1
Heavy cream (or full-fat cream) Salt & Lavender+1
Parmesan cheese, grated Salt & Lavender+1
Fresh basil (or parsley) for garnish Salt & Lavender+1
Seasonings: salt, pepper, Italian herbs, red pepper flakes (optional for heat) Salt & Lavender+1
Instructions
Cook the pasta in salted boiling water until al dente. Drain and set aside, reserving a bit of the pasta water. Salt & Lavender+1
Meanwhile, season the shrimp with salt, pepper, and some Italian herbs. Sear/shrimp in a skillet with butter (or butter + oil) until shrimp turns pink & opaque (usually ~1-2 minutes per side). Remove shrimp and put aside. The Fit Peach+2Golden Grace Kitchen+2
In the same skillet: sauté onion (or shallot) & garlic until fragrant. Add tomato paste & sun-dried tomatoes. Let that cook for a minute to deepen flavor. Salt & Lavender+1
Add wine (or broth) to deglaze, then heavy cream. Stir to combine. Let the sauce simmer so it thickens a bit. Salt & Lavender+1
Stir in Parmesan cheese, and adjust seasoning (salt / pepper / herbs). If sauce is too thick, add a splash of pasta water. The Fit Peach+1
Add back the cooked pasta and shrimp. Gently toss so everything is coated and heated through. The Fit Peach+1
Garnish with fresh basil (or parsley), maybe red pepper flakes for a little heat. Serve immediately. The Fit Peach+1
Tips & Variations
If you don’t have wine, use good quality chicken or vegetable broth. Salt & Lavender
To make it a bit lighter, use half & half instead of full heavy cream. But be careful: thinner creams may curdle with tomato. Salt & Lavender+1
