Marry Me Shrimp Pasta

Ingredients

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside, reserving a bit of the pasta water. Salt & Lavender+1

  2. Meanwhile, season the shrimp with salt, pepper, and some Italian herbs. Sear/shrimp in a skillet with butter (or butter + oil) until shrimp turns pink & opaque (usually ~1-2 minutes per side). Remove shrimp and put aside. The Fit Peach+2Golden Grace Kitchen+2

  3. In the same skillet: sauté onion (or shallot) & garlic until fragrant. Add tomato paste & sun-dried tomatoes. Let that cook for a minute to deepen flavor. Salt & Lavender+1

  4. Add wine (or broth) to deglaze, then heavy cream. Stir to combine. Let the sauce simmer so it thickens a bit. Salt & Lavender+1

  5. Stir in Parmesan cheese, and adjust seasoning (salt / pepper / herbs). If sauce is too thick, add a splash of pasta water. The Fit Peach+1

  6. Add back the cooked pasta and shrimp. Gently toss so everything is coated and heated through. The Fit Peach+1

  7. Garnish with fresh basil (or parsley), maybe red pepper flakes for a little heat. Serve immediately. The Fit Peach+1


Tips & Variations

  • If you don’t have wine, use good quality chicken or vegetable broth. Salt & Lavender

  • To make it a bit lighter, use half & half instead of full heavy cream. But be careful: thinner creams may curdle with tomato. Salt & Lavender+1

  • For more veggies: spinach, mushrooms, or bell peppers can be added.
